As of lately, a significant amount of my guitar playing is almost solely dedicated to classical music (on a classical guitar, of coarse). One composer I always find seriously difficult to play a few measures fluently is Frederic Chopin. I know he was a pianist, but you can find a good amount of his work transcribed on guitar here: http://www.classtab.org/ In my opinion, he is hands down the best classical composer I've heard to date.
