I ask the question even though it's very hard to prove causality, but I do agree that the timelines for GMO introduction and the celiac boom overlap quite a bit.
I think the timeline can be explained in the same manner as the autism spectrum/vaccine argument. Celiac's disease, and all the different levels of Autism are relatively recent discoveries. We learn more about each disease every year. My theory, is that lots of people had social issues to Asperger's (or some other mild form of Autism) without knowing it, and now, knowing what it is, many doctors can diagnose people accurately. It's not that the disorder is more prevalent, just that we have so much more information about it. The use of vaccines is an unrelated coincidence. Same thing with Celiac's. I believe that, over the years, many people have been ill for - what they thought was - no apparent reason. They were ill, because they were a Celiac sufferer, or gluten allergic/intolerant. The more we learn, the better the medical and scientific communities can diagnose, the more cases of these afflictions are reported. The rise of genetically modified foods is an unrelated coincidence. The only evidence I have to support my theory is the fact that Celiac's has been around since the 70's and genetic modification of consumables began in 1994. And in the case of vaccines and Autism, they discovered Autism in the 40's, Vaccinations began in 1796. If there is any connection there, it sure took a while to kick in.
